- 1/2 broccoli
- 1 cup cooked red lentils
- 2 cloves of garlic
- Juice of one lemon
- 50 g kale
- 1 teaspoon grated ginger
- 1 tablespoon virgin olive oil
- Vegetable broth
- Himalayan salt and black pepper
- Sesame seeds/radishes for garnish (optional)
Procedure
Chop the garlic and put it in a pan with virgin olive oil.
Cut the broccoli into bite-sized pieces and add them to the pan.
Fry for 10 minutes and then add the cooked lentils.
Add grated ginger and pour over vegetable broth.
Let the soup simmer for 20 minutes and then add the lemon juice.
Tear small pieces of kale and place it in the bottom of a deep plate.
Pour the hot soup over and season with salt and pepper.
